Last night, my mom and I were craving a cheesy dinner. We had all kinds of ingredients to start out with, but really had a taste for some Mac and Cheese. However, we knew we needed to add a few things to make it truly a filling dish. We put our heads together and came up with the dish below. It was very filling and delicious.
Recipe: Hearty Mac And Cheese Dinner
Summary: A filling mac and cheese recipe
Ingredients
- 16 oz elbow noodles
- 6 cups shredded Cheddar Cheese
- several slices of ham, cubed (1 cup)
- 3-5 green onions chopped, including the green stem
- 3/4 cup milk
- 1/2 cup butter
- 3-6 slices Pepper Jack Cheese
Instructions
- Cook elbow noodles as directed on box
- While noodles are cooking, cube ham and slice green onions.
- Preheat oven to 350
- Drain elbow noodles and leave in strainer
- In same pot, combine milk and butter. Let butter begin melting (use medium to medium high heat)
- Add shredded cheese by handfuls, letting the cheese mostly melt between handfuls (will become quite thick)
- Once all cheese has melted, add ham and onions
- Stir in elbow noodles until mixed well
- Pour noodle mixture into casserole or other oven safe dish
- Cover top of noodle mixture with sliced cheese.
- Bake 20 minutes, or until cheese on top is melted
Quick Notes
*May add small amount of milk if cheese sauce is too thick (MUST be slightly thick to bake well)
Variations
*Can use other meats, such chicken or sausage
*Can use different cheeses as desired
*Substitute 1/2 cup diced onion in place of green onions if desired

I had a strange conversation with my mom while we were riding down the road the other day. It’s not unusual for us to have strange conversations but I never thought I would be explaining email marketing to my mom.
Hey! It has been a hectic and awesome few days lately. First, we got some financials taken care of which takes a HUGE weight off of my family. Bills are paid and we’ve even gotten us some goodies. So much nicer when one can buy some things simply because you want them and not have to worry about what bill will suffer!
With all the complaining, whining, and bitching I’ve done about blogging lately, I bet a lot of newer people to this site are wondering why do I blog if I hate it so much. I don’t hate blogging…In fact, I love to blog when I am in the zone. Lately, I’ve been in the blogging slump zone which makes it hard to see the things I enjoy about this adventure I am on.
